Ingredients

Scale

Meat and Dairy

  • 1 pound ground hamburger
  • 1 cup heavy cream (or milk; substitute with coconut milk or almond milk for dairy-free)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter

Vegetables

  • 4 medium russet or Yukon gold potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • (Optional) Additional veggies such as 1/2 cup diced carrots, celery, or corn

Liquids and Broth

  • 4 cups beef broth (use gluten-free broth if needed)

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon paprika
  • (Optional) Pinch of cayenne or chili powder for spice

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Brown the Ground Hamburger: In a large pot, heat butter over medium-high heat. Add ground hamburger and cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess fat for a less greasy soup.
  2. Sauté Onions and Garlic: Add diced onions to the pot and sauté until translucent, about 4-5 minutes. Stir in minced garlic and cook for another minute until fragrant to build a savory base.
  3. Add Potatoes and Broth: Stir in peeled and diced potatoes along with the beef broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook until potatoes are fork-tender, about 15-20 minutes.
  4. Add Cream and Cheese: Reduce heat to low and stir in heavy cream followed by shredded cheddar cheese. Continue stirring until cheese melts completely, creating a rich, velvety texture.
  5. Season and Serve: Season the soup with salt, pepper, and paprika to taste. Garnish with fresh parsley before serving. Serve piping hot with bread or crackers.

Notes

  • Choose Russet or Yukon gold potatoes for best texture and gentle thickening.
  • Properly brown the ground hamburger to bring out deep, savory flavors.
  • Simmer gently after adding cream to avoid curdling; never boil.
  • Add cheese last to ensure smooth melting without clumps.
  • Use fresh herbs like parsley or chives added just before serving for brightness.
