Ingredients

Scale

For the Steak

  • 1 lb flank, sirloin, or ribeye steak
  • 2 cloves garlic, minced
  • 12 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: fresh herbs (parsley, mint, or basil), splash of soy sauce

For the Zucchini Sauce

  • 1 cup fresh zucchini, grated or blended
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

For the Bowl

  • 2 cups cooked grain (quinoa, rice, or farro)
  • Fresh herbs (parsley, mint, or basil), for garnish
  • Optional additional veggies: grilled peppers, cherry tomatoes, roasted mushrooms

Instructions

  1. Prepare the Zucchini Sauce: Grate or blend the fresh zucchini until smooth. In a bowl, combine the zucchini with minced garlic, lemon juice, olive oil, salt, and pepper. Mix well until creamy and balanced. Refrigerate to allow flavors to meld while preparing the steak.
  2. Marinate the Steak: Generously season the steak with salt, pepper, minced garlic, and a drizzle of olive oil. Optionally add fresh herbs or a splash of soy sauce for extra flavor. Let it rest for at least 20 minutes at room temperature to absorb the marinade.
  3. Grill the Steak: Preheat a grill or grill pan to medium-high heat. Cook the steak for 4-5 minutes per side, depending on thickness and desired doneness. Remove from heat and let rest for 5 minutes to retain juices. Slice thinly against the grain.
  4. Assemble the Bowl: Place a base of cooked grains or greens in a bowl. Arrange the sliced grilled steak on top and drizzle generously with the zucchini sauce. Garnish with fresh herbs, a squeeze of lemon, and any additional veggies or toppings as desired.

Notes

  • Rest your steak after grilling to keep it juicy and tender.
  • Use fresh zucchini for the best flavor and creaminess in the sauce—avoid canned or frozen.
  • If the zucchini sauce is too thick, adjust consistency with a splash of water or olive oil for easier drizzling.
  • Ensure the grill is very hot before placing the steak to achieve perfect sear marks.
  • Slice the steak against the grain to maximize tenderness in every bite.
