  • Black pepper, to taste

Optional Cheese

  • 1/4 cup shredded mozzarella or provolone (optional for extra melty cheesiness)

Instructions

  1. Prep the Filling: Wash and sauté the fresh spinach with a pinch of salt until wilted and tender, then drain any excess moisture thoroughly. In a bowl, combine the wilted spinach with ricotta cheese, garlic powder or minced garlic, salt, and pepper. Mix until well incorporated.
  2. Assemble the Sandwich: Spread a generous amount of the spinach and ricotta mixture evenly over one slice of bread. If desired, sprinkle shredded mozzarella or provolone cheese on top for extra cheesiness. Place the second slice of bread over the filling to form a sandwich.
  3. Heat the Pan and Toast: Heat a skillet over medium heat and melt butter or brush olive oil on one side of the sandwich. Place the sandwich onto the skillet, butter or oil side down. Then spread butter or oil on the other side. Cook until the bottom is golden brown and crispy, about 3 to 4 minutes.
  4. Flip and Finish: Carefully flip the sandwich using a spatula and press lightly. Cook the other side until golden brown and crispy and the cheese inside has melted, about 3 more minutes. Remove from heat and let the sandwich rest for one minute before slicing and serving.
