Ingredients

Scale

For the Chicken and Marinade

  • 46 bone-in chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste

For the Vegetables and Toppings

  • 2 bell peppers, chopped
  • 1 large red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • Additional olive oil, for tossing vegetables
  • Fresh lemon wedges, for serving
  • Fresh parsley or oregano, chopped, for garnish (optional)
  • Crumbled feta cheese, for topping (optional)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper to create a bright, herby marinade that will infuse the chicken and vegetables with flavor.
  2. Marinate the Chicken: Place the chicken thighs in the marinade and coat them thoroughly. Let them rest for at least 15 minutes or up to a few hours in the refrigerator to deepen the flavor and tenderize the meat.
  3. Prep the Vegetables: While the chicken marinates, chop the bell peppers, slice the red onion, and halve the cherry tomatoes. Toss these vegetables with a little olive oil, salt, and pepper to prepare them for even roasting.
  4. Assemble on the Sheet Pan: Spread the marinated chicken thighs and prepared vegetables evenly across a large sheet pan. Scatter the Kalamata olives around the pan to add bursts of savory flavor.
  5. Roast to Perfection: Bake the assembled pan in a preheated oven at 425°F (220°C) for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender and caramelized.
  6. Finish with Fresh Lemon: After removing the pan from the oven, squeeze fresh lemon juice over the entire dish to add a bright, zesty finish before serving.

Notes

  • Use bone-in chicken thighs for juicier and more flavorful results.
  • Do not overcrowd the sheet pan to ensure even roasting instead of steaming.
  • Pat chicken dry before marinating to help the marinade adhere better and achieve crispier skin.
  • Reserve a small amount of marinade for drizzling over the dish right before serving for extra zest.
  • Allow the cooked chicken to rest a few minutes after baking to lock in juices.
