Ingredients

Scale

Crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons brown sugar
  • 5 tablespoons butter, melted

Cheesecake Filling

  • 16 oz (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup sour cream
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: Start by melting the butter and mixing it thoroughly with the graham cracker crumbs and brown sugar until the mixture resembles wet sand. Evenly press this crumb mixture into the bottoms of your serving cups or ramekins, creating a firm base.
  2. Whip the cheesecake filling: In a large bowl, beat the cream cheese until smooth and creamy. Gradually add granulated sugar and spices—ginger, cinnamon, nutmeg, and cloves—ensuring it’s fully blended before incorporating sour cream, eggs, and vanilla extract. Continue to beat until the mixture is luxuriously smooth.
  3. Assemble the cups: Pour the cheesecake filling over the prepared crust in each cup, filling them almost to the top. Smooth the surface with a spatula for an even finish.
  4. Bake: Place the cups on a baking tray and bake at 325°F (160°C) for about 25-30 minutes or until the edges are set but the centers still slightly jiggle. This ensures a creamy texture once cooled.
  5. Chill and garnish: Allow the cups to cool to room temperature, then refrigerate for at least 4 hours or overnight. Before serving, top with your favorite garnish such as whipped cream, a sprinkle of cinnamon, or crushed gingerbread cookies.

Notes

  • Ensure cream cheese and eggs are at room temperature for a smoother batter with fewer lumps.
  • Don’t overmix the batter to avoid cracks or dense texture; mix just until combined.
  • For ultra-silky cheesecake, bake the cups in a water bath to prevent cracking and encourage even cooking.
  • Chilling the cups overnight improves flavor and firms the texture dramatically.
  • Customize the spice levels to your preference by adjusting amounts of ginger, cinnamon, nutmeg, and cloves.
