  • 8 ounces fresh button or cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Herbs and Finishing

  • 1 teaspoon fresh thyme leaves or chopped parsley
  • Juice of half a lemon (optional)

Instructions

  1. Prepare the chicken thighs: Pat the chicken thighs dry thoroughly with paper towels to ensure crispy skin. Season both sides generously with salt and pepper.
  2. Sear the chicken: Heat butter and olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down and cook for 6-8 minutes until golden brown and crispy. Flip and cook for an additional 5 minutes on the other side. Remove chicken from the pan and set aside.
  3. Cook the mushrooms and garlic: In the same skillet, add a little more butter if needed. Add the sliced mushrooms and sauté for 5 minutes until they start to brown. Stir in minced garlic and cook for 1-2 minutes more until fragrant, stirring regularly to avoid burning the garlic.
  4. Combine and simmer: Return the chicken thighs to the skillet, nestling them among the mushrooms. Reduce the heat to medium-low, cover the pan, and cook for 10 minutes or until the chicken is fully cooked and tender.
  5. Finish with fresh herbs and lemon: Sprinkle fresh thyme or parsley over the dish just before serving. If desired, add a squeeze of lemon juice to brighten the flavors and add a fresh lift.
