Ingredients

Scale

Prime Rib Roast

  • 1 Prime Rib Roast (well-marbled, approx. 46 lbs)

Garlic Herb Rub

  • 45 cloves Fresh Garlic, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 2 tbsp Fresh Parsley, chopped
  • 3 tbsp Olive Oil
  • 2 tsp Salt
  • 1 tsp Black Pepper

For Basting

  • 2 tbsp Butter

Instructions

  1. Prep the Roast: Pat your prime rib roast dry with paper towels to ensure a crispy crust. Let it sit at room temperature for about 30 minutes before seasoning to promote even cooking.
  2. Create the Garlic Herb Rub: Mix minced garlic, chopped fresh rosemary, thyme, parsley, olive oil, salt, and pepper in a bowl to form a fragrant paste that will coat the meat.
  3. Coat the Roast: Generously spread the garlic herb rub all over the surface of the prime rib, pressing gently to ensure it sticks well. Season the underside as well for full flavor.
  4. Roast Low and Slow: Preheat your oven to 250°F (120°C). Place the roast on a rack in a roasting pan and cook until the internal temperature reaches 120-125°F for rare or 130-135°F for medium rare.
  5. High-Heat Finish: Increase the oven temperature to 500°F (260°C) for the last 10-15 minutes to form a caramelized crust that contrasts with the tender interior.
  6. Rest Before Slicing: Let the roast rest at least 20 minutes after roasting to allow the juices to redistribute, ensuring juicy slices without spillover.

Notes

  • Use a meat thermometer for precise doneness.
  • Bring the roast to room temperature before cooking for even results.
  • Season liberally with salt and herbs to enhance flavor.
  • Do not skip resting to maintain moistness.
  • Choose a well-marbled prime rib roast for best texture and juiciness.
