Garlic Butter Potatoes

Garlic Butter Potatoes are a simple yet indulgent side dish featuring crispy roasted potatoes infused with rich butter, fresh garlic, and herbs. Perfectly golden on the outside and tender inside, this versatile recipe complements a variety of main courses and is easy to prepare for family meals or festive occasions.

Ingredients

Scale

Potatoes

  • 2 pounds Yukon Gold or red potatoes, washed and cut into evenly sized cubes or wedges

Butter and Oil

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil

Flavorings

  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley or thyme, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prep the potatoes: Start by washing and cutting your potatoes into evenly sized cubes or wedges to ensure uniform cooking. Leaving the skins on adds texture and nutrients, plus a rustic charm.
  2. Melt the garlic butter mixture: In a small saucepan, gently melt the unsalted butter over low heat, then add freshly minced garlic. Let the garlic infuse slowly without burning to create a fragrant butter base.
  3. Toss the potatoes: Transfer your cut potatoes to a large mixing bowl. Drizzle with olive oil, then pour the garlic butter mixture over them. Season generously with salt, pepper, and your choice of fresh herbs, then toss to coat every piece evenly.
  4. Roast until golden: Spread the potatoes on a baking sheet lined with parchment paper in a single layer for easy cleanup and even cooking. Roast in a preheated oven at 425°F (220°C) for about 30-35 minutes, flipping halfway through to ensure even browning and crispness.
  5. Finish and serve: Once the potatoes are golden and crisp, remove from the oven. Optionally sprinkle with extra fresh herbs or a pinch of flaky sea salt before serving warm.

Notes

  • Cut potatoes into uniform pieces to ensure even cooking and perfect texture.
  • Do not overcrowd the baking sheet; give potatoes enough space to crisp rather than steam.
  • Use room temperature butter to allow even infusion of garlic without cooling the mixture abruptly.
  • Flip the potatoes halfway through roasting for an evenly crispy crust.
  • Add extra fresh garlic near the end of cooking if a stronger garlic flavor is desired.
