Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose or bread flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 ¼ cups lukewarm water
  • 1 tsp salt
  • ⅓ cup olive oil, plus extra for drizzling

Toppings

  • Fresh herbs such as rosemary, thyme, or basil
  • Sun-dried tomatoes
  • Olives
  • Mozzarella cheese (or vegan mozzarella for vegan version)
  • Caramelized onions
  • Prosciutto (optional)
  • Sea salt flakes, for sprinkling

Instructions

  1. Prepare the Dough: In a large bowl, combine lukewarm water and yeast. Let it bloom for about 5 minutes until frothy. Add flour, salt, and olive oil, and mix until a sticky dough forms. Knead the dough on a floured surface for 8 to 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let it rise until doubled in size, approximately 1 hour.
  2. Shape and Preheat: Lightly oil a baking sheet. Gently press the risen dough into the pan, stretching it to fit the surface. It does not need to fill the edges perfectly as the dough will rise further. Drizzle olive oil on top and let it rest for another 20 minutes. Meanwhile, preheat your oven to 425°F (220°C).
  3. Add Toppings: Before baking, press your chosen toppings gently into the dough surface. Popular options include sliced tomatoes, olives, fresh herbs, dollops of mozzarella, and caramelized onions. Sprinkle sea salt flakes and drizzle extra olive oil over the top to create a flavorful, golden crust.
  4. Bake to Perfection: Bake the focaccia pizza in the preheated oven for 18 to 22 minutes or until the crust is golden and crispy at the edges and toppings are cooked through. Remove from the oven and allow to cool slightly.
  5. Serve and Enjoy: Cut into rustic squares or slices. Optionally, finish with fresh basil or a drizzle of balsamic glaze for extra flavor before serving. Serve warm for the best taste experience.

Notes

  • Use room temperature ingredients for even yeast activation and dough rising.
  • Do not overload the toppings to prevent soggy focaccia.
  • Be generous with olive oil to achieve a crispy crust and rich flavor.
  • Press dimples into the dough before resting to create the traditional focaccia texture and help hold toppings.
  • Allow sufficient rising time for flavor development and airy texture.
  • Bake on a preheated baking sheet or pizza stone to enhance bottom crust crispness.
