Instructions

  1. Prepare the Filling: Finely chop the carrots, cabbage, onions, and garlic. In a large pan over medium heat, sauté the onions and garlic until fragrant. Add ground pork or beef and cook until browned. Then add the carrots and cabbage. Season with soy sauce, salt, and pepper, and cook until the vegetables are tender but not soggy. Remove from heat and let the filling cool slightly.
  2. Assemble the Lumpia: Lay a spring roll wrapper flat on a clean surface. Spoon about two tablespoons of the filling near one corner of the wrapper. Roll tightly but gently around the filling, folding in the sides to enclose the mixture completely. Moisten the edge of the wrapper with water to seal it securely. Repeat with remaining wrappers and filling.
  3. Fry to Perfection: Heat vegetable oil in a deep pan or wok until it reaches 350°F (175°C). Fry the rolls in batches, turning occasionally, until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels to remove excess oil.
