Instructions

  1. Prepare Your Ingredients: Gather all the ingredients at room temperature to ensure even mixing. Separate the eggs if your recipe calls for yolks only, and measure milk, cream, and sugar precisely.
  2. Whisk Eggs and Sugar: In a large bowl, whisk together the eggs and sugar until the mixture is thick, pale, and slightly frothy for a smooth texture and sweetness.
  3. Heat the Milk and Cream: Combine milk and heavy cream in a saucepan and gently warm over medium heat until just below boiling, stirring occasionally to prevent scorching.
  4. Temper the Eggs: Slowly drizzle some of the hot milk mixture into the egg-sugar blend while whisking continuously to avoid curdling. Then gradually pour the combined mixture back into the saucepan.
  5. Cook Until Thickened: Cook on low heat, stirring constantly, until the mixture coats the back of a spoon and reaches about 160°F (71°C). Avoid boiling to prevent scrambling the eggs.
  6. Add Flavors and Chill: Remove from heat and stir in vanilla extract, nutmeg, and cinnamon. Add alcohol if desired. Let the eggnog cool, then refrigerate for at least two hours to allow the flavors to meld.
