Ingredients

Scale

Main Ingredients

  • 2 ripe mangoes, peeled and chopped
  • 250g mascarpone cheese
  • 200ml whipping cream
  • 2024 ladyfinger biscuits
  • 100g sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Optional: 50ml mango puree or mango syrup for soaking ladyfingers

Instructions

  1. Prepare the Mango Puree: Peel and chop the ripe mangoes, then blend them into a smooth puree. This puree will be used to soak the ladyfingers and added as fresh mango layers in the tiramisu.
  2. Whip the Cream and Mascarpone: In a chilled bowl, whisk the whipping cream until soft peaks form. Gently fold in the mascarpone cheese, sugar, vanilla extract, and lemon juice into the whipped cream to create a smooth, fluffy cream filling without eggs.
  3. Soak the Ladyfingers: Quickly dip each ladyfinger into the mango puree or mango syrup, ensuring they absorb the liquid without becoming soggy. Arrange the soaked ladyfingers evenly in your serving dish to form the first layer.
  4. Layer the Cream and Mango: Spread half of the mascarpone cream over the ladyfingers. Add a layer of fresh mango chunks or more mango puree to enhance juiciness. Repeat with another soaked ladyfinger layer and top with the remaining cream.
  5. Chill and Serve: Cover the tiramisu and refrigerate for at least 4 hours or overnight to allow flavors to meld and set into a creamy texture. Garnish with mango slices or mint leaves before serving.

Notes

  • Use very ripe mangoes for the best flavor and smooth puree.
  • Do not over-soak ladyfingers to prevent sogginess; a quick dip is sufficient.
  • Chill the tiramisu thoroughly, preferably overnight, for optimal flavor and texture.
  • Fold mascarpone and whipped cream gently to maintain a light and airy cream.
  • Adjust sugar according to the natural sweetness of the mangoes.
