Ingredients

Scale

Main Ingredients

  • 4 Large Flour Tortillas (1012 inch)
  • 6 Eggs, scrambled
  • 1 cup Shredded Cheddar or Monterey Jack Cheese
  • 4 slices Cooked Bacon or 4 Sausages, chopped
  • 1 cup Diced Bell Peppers
  • 1 cup Diced Onions
  • Optional: 1/2 cup Black Beans, warmed
  • 1 Avocado or 1/2 cup Guacamole
  • 1/2 cup Salsa or Hot Sauce
  • 2 tablespoons Fresh Cilantro, chopped

Variation Ingredients (Optional)

  • Sautéed Mushrooms or Spinach (for vegetarian version)
  • Diced Jalapeños or Chipotle Sauce (for spicy kick)
  • 1/2 cup Corn and Squeeze of Lime (for southwest style)
  • Low-carb or Whole Wheat Tortillas or Large Lettuce Leaves (for low-carb option)

Instructions

  1. Prepare the Fillings: Scramble the eggs gently in a pan over medium heat until soft and fluffy. Separately, sauté diced bell peppers and onions until tender and fragrant. Cook bacon or sausage until crispy, then chop into bite-sized pieces. Warm black beans if using.
  2. Warm the Tortillas: Heat the tortillas on a dry skillet or in the microwave for a few seconds to make them pliable and easier to roll.
  3. Assemble the Burritos: Lay each warmed tortilla flat and layer with scrambled eggs first, then add the cooked meat, sautéed veggies, and beans if using. Sprinkle generously with shredded cheese, then add salsa or diced avocado for flavor and creaminess.
  4. Roll and Seal: Fold the sides of the tortilla inward, then tightly roll from one end to the other, ensuring the filling stays tucked in. Secure with a toothpick if needed or place seam-side down in the pan.
  5. Final Toast (Optional): Toast the wrapped burrito on a skillet over medium heat until the outside is golden and crispy, about 2 minutes per side, for extra crunch and warmth.

Notes

  • Use Fresh Ingredients: Fresh veggies and herbs bring vibrant flavor and color.
  • Don’t Overfill: Keep fillings balanced to avoid tearing the tortilla and messy bites.
  • Cook Eggs Low and Slow: Gently cook eggs over low heat for tender, creamy texture.
  • Toast Tortillas Carefully: Warm tortillas just enough to soften without making them brittle.
  • Wrap While Warm: Assemble burritos while ingredients are hot for optimal melting and flavor blending.
