Ingredients

Scale

Beef

  • 8 oz thinly sliced flank or sirloin steak

Vegetables

  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1/2 cup snap peas
  • 1/2 cup sliced carrots

Sauce Ingredients

  • 3 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon oyster sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Oil and Thickener

  • 2 tablespoons vegetable or sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Optional Extras

  • 2 green onions, chopped
  • Crushed red pepper flakes, to taste

Instructions

  1. Prep Your Ingredients: Slice the beef thinly against the grain to ensure tenderness. Chop chosen vegetables into bite-sized pieces for even cooking. Mix together soy sauce, oyster sauce, garlic, and ginger in a small bowl and set aside for easy access.
  2. Marinate the Beef: Combine the beef slices with a splash of soy sauce, a teaspoon of cornstarch, and a dash of vegetable oil. Let it rest for about 10 minutes to enhance flavor and texture before cooking.
  3. Cook the Beef: Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and sear quickly for 2-3 minutes until browned but not fully cooked through. Remove the beef and set aside.
  4. Stir-Fry the Vegetables: In the same pan, add a bit more oil if needed, then toss in the vegetables. Stir-fry for 3-5 minutes until they are tender-crisp and vibrant in color.
  5. Combine and Finish: Return the beef to the pan with the vegetables. Pour over the prepared sauce and add the cornstarch slurry. Toss everything together, cooking for another 2 minutes until the beef is cooked through and the sauce has thickened beautifully.

Notes

  • Slice beef thinly to cook quickly and stay tender.
  • Use high heat for a perfect sear and to maintain vegetable crunch.
  • Prep all ingredients and mix the sauce before cooking for smooth workflow.
  • Avoid overcrowding the pan; cook beef in batches if necessary.
  • Fresh vegetables make a significant difference in flavor and texture.
