Ingredients

Scale

Filling

  • 68 fresh ripe peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, cut into small pieces

Crust

  • 1 double crust pie dough (homemade or store-bought, enough for deep-dish pan)

Instructions

  1. Prepare the Peaches: Peel, pit, and slice the fresh peaches into even pieces. In a large bowl, gently toss the peach slices with lemon juice, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and vanilla extract. Set aside to macerate while preparing the crust.
  2. Make or Prepare the Crust: If making homemade dough, prepare your favorite pie crust recipe and chill it until firm. If using store-bought, roll out the dough to fit a deep-dish pie pan, ensuring an even thickness all around.
  3. Assemble the Pie: Press one layer of the crust into the bottom and up the sides of the deep-dish pie pan. Pour the peach filling evenly into the crust. Dot the filling with small pieces of butter. Cover with the second crust layer, using either a full cover or a lattice pattern, and crimp edges well to seal.
  4. Bake to Perfection: Preheat oven to 375°F (190°C). Place the assembled pie on a baking sheet to catch drips. Bake for 50-60 minutes until the crust is golden brown and the filling bubbles. If crust edges brown too quickly, cover with foil halfway through baking.
  5. Cool and Serve: Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set, making slicing easier and flavors more developed before serving.

Notes

  • Choose ripe peaches for optimal sweetness and juiciness.
  • Keep dough chilled throughout preparation to ensure a flaky crust.
  • Adjust thickening agents like flour depending on peach juiciness to avoid soggy filling.
  • Pre-baking the bottom crust slightly can help prevent sogginess.
  • Use a deep-dish pan to achieve a generous filling depth.
