  • 4 ounces cream cheese or 1/2 cup sour cream

Instructions

  1. Prepare the Ingredients: Finely chop the onion and garlic. Drain and rinse the canned white beans to reduce sodium and improve flavor. Measure out all the spices for easy addition.
  2. Layer Ingredients in the Crockpot: Place the chicken breasts or thighs at the bottom of the crockpot. Add the white beans, chopped onion, garlic, green chilies or jalapeños, and pour in the chicken broth. Sprinkle the cumin, oregano, chili powder, salt, and pepper evenly over the top.
  3. Slow Cook to Perfection: Cover and cook on low for 6 to 8 hours or on high for 4 hours, until the chicken is tender enough to shred easily with forks.
  4. Shred the Chicken and Add Creaminess: Remove the chicken from the crockpot and shred it finely using two forks or a stand mixer. Return shredded chicken to the crockpot and stir in the cream cheese or sour cream until fully incorporated and creamy.
  5. Final Seasoning and Serve: Taste the chili and adjust seasoning with salt, pepper, or a squeeze of fresh lime juice for brightness. Let simmer an additional 15 minutes if desired before serving.
