This Crockpot Cheesesteak Potato Casserole combines tender strips of seasoned beef, sautéed bell peppers and onions, hearty russet potatoes, and melted provolone or American cheese, slow-cooked to create a rich, comforting, and effortless family meal perfect for busy weeknights or cozy gatherings.

Ingredients

Scale

Proteins

  • 1 lb thinly sliced beef (such as ribeye or sirloin)

Vegetables

  • 4 medium russet potatoes, washed and cut into evenly sized cubes
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 2 cloves garlic, minced

Dairy

  • 2 cups provolone or American cheese, shredded or sliced, divided

Liquids

  • 1 cup beef broth

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Optional seasoning: additional herbs or spice blends of choice
  • 12 tbsp oil (for sautéing)

Instructions

  1. Prepare Your Ingredients: Wash and cube the russet potatoes into evenly sized pieces to ensure uniform cooking. Slice the beef thinly if not pre-sliced. Chop the bell peppers and onions into strips or bite-sized pieces.
  2. Sauté the Peppers and Onions: Heat oil in a skillet over medium heat. Add the bell peppers, onions, and minced garlic. Cook until soft and fragrant, about 5-7 minutes, to bring out natural sweetness and enhance flavor.
  3. Layer the Ingredients in the Crockpot: Lightly grease the crockpot. Place half of the cubed potatoes in an even bottom layer. Add half of the seasoned beef strips on top, then half of the sautéed peppers and onions. Sprinkle a portion of the cheese over the layers. Repeat layering with the remaining potatoes, beef, peppers, onions, and cheese.
  4. Add Broth and Seasoning: Pour the beef broth evenly over the layered ingredients. Season with salt, black pepper, and any additional seasonings you prefer to infuse flavor and moisture into the casserole.
  5. Cook Low and Slow: Cover and set the crockpot to low. Cook for 6 to 8 hours, allowing the beef and potatoes to tenderize and the flavors to meld thoroughly.
  6. Add Cheese and Finish: About 30 minutes before serving, sprinkle extra cheese on top of the casserole. Cover and let the cheese melt until golden and bubbly, sealing in the deliciousness.

Notes

  • Use thin slices of beef to ensure quick cooking and tender texture.
  • Proper layering helps flavors meld and prevents potatoes from drying out.
  • Sautéing peppers and onions beforehand enhances their flavor significantly.
  • Cook on low heat to avoid overcooking potatoes or toughening the meat.
  • Allow casserole to rest for 10 minutes before serving for better flavor development.
