  • 2 tablespoons vegetable oil (for searing rice)
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, finely chopped
  • Spicy mayo or sriracha, for topping (optional)

Instructions

  1. Prepare the Sushi Rice: Cook sushi rice according to package instructions. While still warm, season with rice vinegar, sugar, and salt. Mix well and allow to cool slightly.
  2. Shape and Crisp the Rice: Wet your hands to prevent sticking, then shape the rice into small squares or rectangles. Heat vegetable oil in a pan over medium-high heat. Sear the rice pieces until the bottoms are golden brown and crispy, about 3-5 minutes.
  3. Prepare the Salmon Topping: Slice salmon into thin, bite-sized strips or cubes. Toss gently with soy sauce and sesame oil to enhance the flavor.
  4. Assemble the Bites: Place the salmon pieces carefully on top of each crispy rice portion. Add a small dollop of spicy mayo or sriracha if desired. Garnish with chopped green onions and toasted sesame seeds.
  5. Serve Immediately: Serve right away to enjoy the rice’s crispiness and fresh salmon tenderness.
