  • 1 Shallot or small Onion, finely chopped
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh dill or parsley, chopped
  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Risoni: Heat the chicken or vegetable stock in a pot. Gradually add the risoni pasta and cook gently, stirring occasionally until tender and most of the liquid is absorbed, creating a creamy base.
  2. Cook the Salmon: Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat and pan-sear the salmon skin-side down until crisp. Flip carefully and cook through. Set aside to cool slightly for flaking.
  3. Sauté Aromatics: In the same skillet, add butter and sauté minced garlic and chopped shallots or onions until soft and fragrant, forming the base flavor of the sauce.
  4. Build the Creamy Sauce: Pour in heavy cream and a splash of lemon juice to the skillet. Stir to combine with the sautéed aromatics. Simmer gently to thicken the sauce slightly and meld flavors.
  5. Combine Salmon and Risoni: Flake the cooked salmon into bite-size pieces and fold it into the creamy sauce along with the cooked risoni pasta. Add fresh herbs, season with salt, pepper, and lemon zest. Gently stir everything together.
