Instructions

  1. Prepare the Vegetables: Peel and dice the potatoes into evenly sized cubes to ensure uniform cooking. Finely chop the onion and mince the garlic cloves.
  2. Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onions and minced garlic, cooking for about 3-4 minutes until soft and fragrant but not browned.
  3. Cook the Potatoes: Add the diced potatoes and broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.
  4. Blend the Soup: Use an immersion blender to puree half of the soup until smooth. Alternatively, transfer half to a blender and blend, then return to the pot. Stir to combine for a creamy yet slightly textured consistency.
  5. Finish with Cream: Gently stir in the heavy cream, warming the soup without boiling. Season with salt, pepper, and optional herbs to taste.
