Ingredients

Scale

Main Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 9 oz fresh or frozen cheese tortellini
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Prepare the Chicken and Broccoli: Heat olive oil or butter in a large skillet over medium heat. Add the chicken pieces, seasoning with salt, pepper, and Italian seasoning if using. Cook about 5-7 minutes until golden brown and cooked through. Remove the chicken to a plate. In the same skillet, add broccoli florets and sauté for 3-4 minutes until bright green and crisp-tender.
  2. Cook the Garlic and Tortellini: Lower the heat. Add a little more olive oil or butter and then the minced garlic. Stir frequently for 30 seconds until fragrant. Add cheese tortellini and chicken broth to the skillet. Bring to a simmer and cook according to package instructions, typically 3-5 minutes, until the tortellini is tender.
  3. Make the Creamy Sauce: Pour in the heavy cream and sprinkle grated Parmesan cheese over the skillet. Stir gently to combine, allowing the cheese to melt and the sauce to thicken slightly. Return the cooked chicken and broccoli to the pan and fold everything together to coat evenly. Taste and adjust seasoning with salt and pepper.
  4. Serve Hot: Once the sauce reaches the desired consistency and all ingredients are heated through, remove from heat. Serve immediately in bowls, optionally garnished with fresh herbs or extra Parmesan.

Notes

  • Use fresh tortellini when possible for creamier texture and faster cooking.
  • Avoid overcooking broccoli to retain vibrant color and crunch.
  • Freshly grate Parmesan cheese for best flavor and melting quality.
  • Simmer sauce gently to prevent cream curdling; avoid boiling once cream is added.
  • Reserve some pasta cooking liquid to loosen the sauce if it becomes too thick.
