  • Fresh herbs (basil or parsley), for garnish

Instructions

  1. Prepare the Filling: Cook the chicken breast until tender and fully cooked, then shred or finely chop. In a bowl, combine the shredded chicken with ricotta cheese, grated Parmesan, chopped fresh herbs, salt, and pepper. Mix thoroughly until creamy and well blended.
  2. Stuff and Cook Ravioli: If making ravioli from scratch, roll out pasta dough thinly, place spoonfuls of filling evenly spaced, then cover with another sheet of dough. Seal around each mound to form individual ravioli. If using store-bought ravioli, skip to cooking. Boil the ravioli gently in salted water until they float to the top and pasta is tender but firm, about 3-4 minutes. Drain carefully.
  3. Make the Creamy Sauce: In a pan, sauté minced garlic and finely chopped onions in butter or olive oil over medium heat until fragrant and translucent, about 3-4 minutes. Pour in heavy cream and simmer gently. Stir in freshly grated Parmesan cheese until the sauce thickens slightly. Season with salt and pepper to taste, taking care not to boil the sauce vigorously.
  4. Combine and Serve: Add the drained ravioli to the sauce and toss gently to coat. Let them simmer together for 2-3 minutes to meld the flavors. Serve warm, garnished with chopped fresh herbs and extra grated Parmesan cheese if desired.
