  • 1 cup shredded cheese, sharp cheddar or mild (optional)

Instructions

  1. Preheat and Prepare: Set your oven to 350°F (175°C) and grease a medium baking dish with butter or non-stick spray to prevent sticking and promote a golden crust.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the eggs, sour cream, melted butter, and milk until smooth and fully combined to create the moist base of the casserole.
  3. Combine Dry Ingredients: Add the corn muffin mix to the wet ingredients, then gently fold in the corn kernels and cheese if using, taking care not to overmix to maintain a light texture.
