Ingredients

Scale

Main Ingredients

  • 23 lbs Chuck Roast
  • 1 large Onion, chopped
  • 34 cloves Garlic, minced
  • 2 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 cup Beef Broth or Stock
  • 2 tbsp Olive Oil
  • 810 Corn or Flour Tortillas

Fresh Toppings

  • Fresh Cilantro, chopped
  • Lime wedges

Optional Toppings

  • Diced Onions
  • Avocado slices
  • Shredded Cheese
  • Salsa

Instructions

  1. Sear the Chuck Roast: Season the chuck roast generously with salt, pepper, chili powder, and cumin. Heat olive oil in a heavy pan over medium-high heat, then sear the roast on all sides until a rich brown crust forms. This locks in juices and builds flavor.
  2. Prepare the Aromatics: In the same pan, sauté the chopped onions and minced garlic until soft and fragrant to create a savory base.
  3. Slow Cook or Pressure Cook the Roast: Transfer the seared chuck roast and sautéed aromatics to a slow cooker or pressure cooker. Add beef broth to keep the meat moist. Cook low and slow for 6-8 hours or pressure cook for about 60 minutes until the meat is tender.
  4. Shred the Meat: Once fork-tender, remove the roast and shred it using two forks. Mix the shredded beef back into the cooking juices to absorb the flavors.
  5. Warm Tortillas and Assemble: Warm corn or flour tortillas in a dry skillet or microwave. Spoon the shredded chuck roast onto each tortilla and top with fresh cilantro, lime, and your choice of optional toppings. Serve immediately for the best experience.

Notes

  • Choose well-marbled chuck roast for juicier meat.
  • Don’t skip searing—the browning intensifies flavor and adds color.
  • Use fresh spices for maximum flavor impact.
  • Let the meat rest slightly before shredding to retain moisture.
  • Toast tortillas lightly on high heat for flexibility and enhanced flavor.
