  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the Marinade: In a large bowl, combine yogurt, garlic and ginger paste, cumin, coriander, paprika, turmeric, chili powder, lemon juice, oil, salt, and pepper. Whisk thoroughly until smooth to create a rich, aromatic marinade.
  2. Marinate the Chicken: Add bite-sized chicken pieces to the marinade and mix well, ensuring every piece is coated. Cover and refrigerate for at least 30 minutes, up to 4 hours for deeper flavor and tenderness.
  3. Prepare Skewers and Grill: Soak wooden skewers in water for 20 minutes to prevent burning. Thread the marinated chicken onto skewers, leaving small gaps between pieces. Preheat a grill or grill pan over medium-high heat and cook kebabs for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  4. Rest and Garnish: Remove kebabs from the grill and let them rest for a few minutes to retain juiciness. Sprinkle freshly chopped cilantro on top before serving for added freshness and color.
