Chicken Patties
- 1 lb ground chicken
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs for GF)
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh cilantro, chopped
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/4 tsp black pepper
- 1 large egg
- 2 tbsp olive oil (for cooking)
Zesty Sauce
- 1/2 cup mayonnaise
- 1 tbsp mustard
- 1 tbsp hot sauce (or sriracha)
- 1 tbsp fresh lemon juice
Burger Assembly
- 4 burger buns (soft brioche or whole wheat, or gluten-free buns)
- 4 leaves fresh lettuce
- 4 slices tomato
- Prepare the Chicken Mixture: In a large bowl, combine ground chicken, breadcrumbs, minced garlic, finely chopped onion, fresh parsley and cilantro, paprika, cumin, black pepper, and egg. Mix gently until just combined, taking care not to overwork the mixture to avoid dense burgers.
- Form the Patties: Divide the mixture into 4 equal portions and shape each into a round patty about ¾ inch thick. Press a slight indentation in the center of each patty to ensure even cooking and prevent puffing.
- Cook the Chicken Patties: Heat olive oil in a large skillet over medium heat. Place the patties in the pan without crowding. Cook for 5-6 minutes on each side or until the internal temperature reaches 165°F (74°C) and the outside is golden brown.
- Make the Zesty Sauce: While patties cook, mix mayonnaise, mustard, hot sauce (or sriracha), and fresh lemon juice in a small bowl. Adjust heat and acidity by adding more hot sauce or lemon juice according to taste.
- Assemble the Burgers: Lightly toast burger buns for a crisp texture. Spread a generous layer of the zesty sauce on both bun halves. Place the cooked chicken patty on the bottom bun, then top with fresh lettuce and tomato slices. Add any additional toppings as desired and cover with the top bun.
Notes
- Don’t overmix the chicken mixture to avoid tough burgers.
- Chill patties in the refrigerator for 15 minutes before cooking to help them hold their shape.
- Use a meat thermometer to ensure patties reach 165°F internally for safe consumption.
- Toast buns lightly to add flavor and prevent sogginess from the sauce.
- Adjust the zesty sauce’s spice and acidity to your preference by tasting as you go.
