Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain the pasta, reserving one cup of pasta water, then set aside.
  2. Cook the Chicken: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken for about 6-7 minutes per side until golden brown and thoroughly cooked. Remove from the skillet and slice or dice once slightly cooled.
  3. Make the Alfredo Sauce: Reduce the heat to medium and melt the butter in the same skillet. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer, stirring frequently. Gradually whisk in the freshly grated Parmesan cheese until the sauce becomes smooth and creamy.
  4. Combine Pasta, Chicken, and Sauce: Add the cooked pasta and chicken pieces to the Alfredo sauce. Toss gently to coat everything evenly. If the sauce is too thick, add the reserved pasta water a little at a time to reach the desired consistency. Season with additional salt and pepper to taste.
  5. Garnish and Serve: Sprinkle chopped fresh parsley over the top for color and freshness. Serve immediately while warm for the best flavor and texture.
