Cheesy Taco Pie

Cheesy Taco Pie is a comforting and flavorful casserole combining bold taco-seasoned ground meat, melty cheese, and a crispy crust. This easy-to-make dish is perfect for busy weeknights or family dinners, delivering hearty, cheesy goodness with classic Mexican-inspired flavors in one satisfying pie.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef (or ground turkey/chicken for a lighter option)
  • 2 tbsp taco seasoning (blend of chili powder, cumin, paprika, garlic powder)

Vegetables and Beans

  • 1 cup diced onions
  • 1 cup diced bell peppers
  • Optional: 1 cup refried beans or black beans
  • Optional: 1 cup salsa or diced tomatoes

Cheese

  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded Monterey Jack cheese

Crust

  • 1 pre-made pie crust or equivalent amount of corn tortillas for gluten-free option

Optional Add-ins and Garnishes

  • Jalapeños or hot sauce (for a spicy kick)
  • Extra veggies like corn, zucchini, or spinach
  • Cheese alternatives: pepper jack or queso fresco
  • Diced tomatoes, sliced avocado or guacamole, sour cream, chopped cilantro or green onions for garnish

Instructions

  1. Prepare the filling: Brown the ground meat in a skillet over medium heat until fully cooked. Drain excess fat, then add diced onions, bell peppers, and taco seasoning. Cook for a few minutes more until vegetables soften and flavors meld.
  2. Assemble the crust: Press your pie crust or layer corn tortillas gently into a pie dish to create a crispy base that contrasts with the creamy filling.
  3. Layer the pie: Spread a thin layer of refried beans or salsa over the bottom crust. Spoon in the seasoned meat mixture. Generously sprinkle shredded cheese on top. Repeat layers if your pan has room, finishing with cheese as the top layer.
  4. Bake to perfection: Preheat the oven to 375°F (190°C). Bake the assembled pie for 25 to 30 minutes until the crust is golden and the cheese bubbles deliciously.
  5. Cool and serve: Let the pie rest for 5 to 10 minutes to set. Slice into wedges and serve with desired toppings such as diced tomatoes, avocado, sour cream, and chopped herbs.

Notes

  • Use freshly shredded cheese for better melting and texture over pre-shredded varieties.
  • Allow the pie to rest after baking to prevent it from falling apart when slicing.
  • Taste and adjust the taco seasoning in the meat mixture before assembling to suit your flavor preference.
  • Add crunchy textures by mixing in corn or chopped nuts if desired.
  • Consider doubling the cheese topping for a richer, golden crust.
