Ingredients

Scale

For the Dough

  • 2 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 tsp active dry yeast
  • 3/4 cup warm water (adjust accordingly for gluten-free dough)
  • 1/2 tsp salt
  • 2 tbsp olive oil

For the Filling

  • 1 cup shredded cheese (mozzarella, cheddar, feta, paneer, or plant-based cheese)
  • Optional fresh herbs (parsley, cilantro, basil)
  • Optional spices (chili flakes, garlic powder, or others as desired)

Optional Add-ins

  • Sautéed spinach, mushrooms, or caramelized onions
  • Diced jalapeños or chili flakes for spice
  • Butter or ghee for brushing after cooking

Instructions

  1. Prepare the Dough: Dissolve yeast in warm water and let it activate until foamy, about 5-10 minutes. In a large bowl, combine flour, salt, and olive oil. Add the yeast mixture and knead until the dough is smooth and elastic. Cover and let it rest for about 1 hour or until it doubles in size.
  2. Divide and Shape: After the dough has risen, punch it down to release air. Divide the dough into equal portions. Roll each portion into a small circle on a floured surface, ensuring an even thickness for uniform cooking.
  3. Add the Cheese Filling: Place a generous amount of your chosen cheese or cheese mixture in the center of one rolled dough circle. Spread it evenly, taking care not to overfill to prevent leakage.
  4. Seal the Flatbread: Cover the cheese with another rolled dough circle. Press the edges firmly to seal the cheese inside, and crimp with fingers or a fork to secure.
  5. Cook to Perfection: Heat a non-stick skillet or tawa over medium heat. Place the stuffed flatbread on the skillet and cook until golden brown spots appear on both sides and the cheese melts, flipping carefully to maintain the seal.

Notes

  • Allow the dough ample resting time for a softer, more pliable flatbread.
  • Cook on moderate heat to ensure cheese melts without burning the bread.
  • Seal the edges firmly to prevent cheese from leaking during cooking.
  • Brush cooked flatbreads with butter or ghee for added flavor and shine.
  • Use fresh, good-quality cheese for the best melt and taste.
