Ingredients

Scale

Main Ingredients

  • 1 lb ground chicken (lean with some fat for juiciness)
  • 4 oz sharp cheddar cheese, shredded
  • 2 chipotle peppers in adobo sauce, finely chopped (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper

For Cooking & Assembly

  • 2 tbsp olive oil or avocado oil (for cooking)
  • 4 sturdy burger buns (brioche or pretzel recommended)
  • Lettuce leaves (optional garnish)
  • Tomato slices (optional garnish)
  • Pickles (optional garnish)

Instructions

  1. Prepare the Chipotle Chicken Mixture: Finely chop the chipotle peppers and mix them into the ground chicken with garlic powder, onion powder, salt, pepper, breadcrumbs, and egg. Gently combine everything until evenly distributed without overworking to keep the texture tender.
  2. Form the Patties: Divide the chicken mixture into equal portions and flatten each into a thin round on a clean surface. Place a generous amount of shredded cheddar in the center of half the rounds, then top with the remaining rounds. Pinch the edges tightly to seal completely, enclosing the cheese.
  3. Cook the Burgers: Heat the oil in a skillet or grill pan over medium heat. Carefully place the stuffed patties in the pan and cook for about 5-6 minutes per side, flipping once, until golden brown and cooked through with the cheese melted inside. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  4. Assemble and Serve: Lightly toast the burger buns. Layer the cooked patties with optional fresh garnishes such as lettuce, tomato, and pickles. Serve immediately for the best juicy and cheesy experience.

Notes

  • Seal the edges of the patties tightly to prevent cheese from leaking during cooking.
  • Do not overmix the chicken mixture to avoid dense patties; mix just until combined.
  • Use a meat thermometer to cook burgers to a safe internal temperature of 165°F (74°C).
  • Let the burgers rest a few minutes after cooking to allow juices and cheese to redistribute.
  • Lightly toast buns for added texture and to help them hold up to the juicy patties.
