Instructions

  1. Step 1: Sauté the Aromatics – Heat 2 tablespoons of olive oil or butter in a large pot over medium heat. Add the diced onions and minced garlic, cooking until fragrant and translucent, about 3-5 minutes, to build a savory and flavorful base.
  2. Step 2: Cook the Cauliflower – Add the cauliflower florets to the pot, stirring to coat them with the sautéed onions and garlic.   3. Step 3: Blend the Soup – Use an immersion blender directly in the pot or carefully transfer the soup in batches to a countertop blender. Puree the soup until smooth and creamy. If the soup is too thick, add extra broth or cream little by little until your desired consistency is reached.
  4. Step 4: Season and Finish – Stir in 1/2 cup of heavy cream or coconut milk to add richness. Season with salt and pepper to taste. Add your choice of fresh herbs such as thyme or parsley. Heat the soup gently without boiling to meld all the flavors together, then remove from heat and serve.
