Instructions

  1. Prepare the Pasta: Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water, then set pasta aside.
  2. Cook the Chicken: Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side until golden and cooked through. Remove from skillet and slice into strips.
  3. Make the Bruschetta Topping: Dice Roma tomatoes and mince garlic. In a bowl, combine tomatoes, garlic, chopped basil, a drizzle of olive oil, and balsamic vinegar. Add salt and pepper to taste and mix gently to combine.
  4. Combine Everything: Return skillet to medium heat, add a splash of reserved pasta water, then toss in cooked pasta and chicken slices. Pour over the bruschetta mixture and stir carefully until heated through and well coated.
  5. Finish and Serve: Remove from heat and sprinkle freshly grated Parmesan cheese and additional basil on top. Optionally, add red pepper flakes for heat. Serve immediately.
