Ingredients

Scale

Beef & Meat

  • 1 lb beef tips (sirloin or stew meat), cut into bite-sized pieces

Noodles

  • 8 oz egg noodles

Liquids & Fats

  • 2 cups beef broth
  • 2 tbsp butter
  • 1 tbsp oil (vegetable or olive oil)

Vegetables & Aromatics

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)

Thickening & Seasonings

  • 2 tbsp all-purpose flour
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp dried thyme or 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Ingredients: Slice beef tips into bite-sized pieces if needed, finely chop onions and garlic, and measure out noodles and beef broth to have everything ready.
  2. Brown the Beef: Heat butter and oil in a large skillet over medium-high heat. Add beef tips and sear until browned on all sides to lock in flavor. Remove beef and set aside.
  3. Sauté Aromatics and Mushrooms: In the same skillet, add onions, garlic, and mushrooms (if using). Cook until softened and fragrant, scraping up browned bits from the beef for extra flavor.
  4. Create the Sauce: Sprinkle flour over the vegetables and stir well. Slowly pour in beef broth while stirring constantly to avoid lumps. Let the sauce thicken to a creamy consistency.
  5. Return Beef and Simmer: Add the beef tips back into the skillet. Reduce heat, cover, and simmer until beef is tender and flavors meld together, about 10-15 minutes.
  6. Cook the Noodles: Meanwhile, boil egg noodles according to package instructions. Drain and toss with a bit of butter or olive oil to prevent sticking.
  7. Combine and Serve: Either mix the cooked noodles into the beef and sauce mixture or plate the beef tips over the noodles. Garnish as desired and serve hot.

Notes

  • Use tender beef cuts like sirloin to avoid toughness.
  • Brown beef in batches to ensure proper caramelization and avoid overcrowding the pan.
  • Simmer beef gently for optimal tenderness; be patient during this step.
  • Add fresh herbs like parsley or thyme at the end to add brightness and freshness.
  • Reserve some extra sauce to drizzle on noodles after plating for extra moisture and flavor.
