  • 34 fresh garlic cloves (unpeeled)

  • 8 oz (225g) short pasta like penne, fusilli, or rigatoni
  • Salt, to taste
  • Black pepper, to taste
  • Optional: red chili flakes, to taste

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Place a block of feta cheese in the center of a baking dish and arrange the cherry tomatoes and uncut garlic cloves evenly around it. Drizzle everything with olive oil.
  2. Roast Until Soft and Golden: Bake the feta and tomatoes for about 30 minutes, or until the tomatoes burst open and the feta is golden on top and creamy inside.
  3. Cook Pasta: While the feta and tomatoes roast, cook the pasta in salted boiling water until al dente. Reserve a small amount of pasta water before draining.
  4. Combine and Mash: Remove the baking dish from the oven. Use a spoon to mash the baked feta and tomatoes together into a smooth sauce, mixing in the roasted garlic to taste. Add the drained pasta and toss to combine.
  5. Adjust and Serve: If the sauce is too thick, slowly add reserved pasta water until you reach your desired consistency. Finish with fresh basil leaves and a sprinkle of black pepper before serving.

  • Choose block feta for a creamy melt rather than crumbled feta which may dry out.
  • Use fresh cherry or grape tomatoes for natural sweetness and flavor balance.
  • Reserve and use pasta water to bind the sauce and create a silky texture.
  • Mash the feta and tomatoes gently to keep some texture in the sauce.
  • Season gradually with salt since feta is naturally salty; black pepper and fresh herbs enhance the flavor.
