Instructions

  1. Prepare the Carrots: Wash, peel, and finely shred or julienne the carrots to ensure a perfect crunch and optimal dressing absorption.
  2. Make the Dressing: In a small bowl, whisk together rice vinegar, honey or maple syrup, sesame oil, minced garlic, and grated ginger. Season with salt, pepper, and chili flakes if using.
  3. Combine Salad Ingredients: Place the shredded carrots in a large mixing bowl. Add chopped cilantro and mint, then pour the dressing over. Toss gently to coat all ingredients evenly.
