Instructions

  1. Prepare the Apples: Peel, core, and slice the apples into thin, even pieces. In a large bowl, toss the apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, cloves, lemon juice, and a pinch of salt. Set aside to allow the flavors to meld.
  2. Make or Roll Out the Pie Crust: Roll out half of your chilled dough into a 12-inch circle to form the bottom crust. Fit it gently into your pie dish, patching any cracks, and keep the other half of the dough chilled for the lattice top.
  3. Assemble the Filling: Pour the apple mixture evenly into the bottom crust. Dot the filling with small pats of cold butter to add richness and help create a flaky texture during baking.
  4. Create the Lattice Crust: Roll out the remaining dough and cut it into 1/2-inch-wide even strips. Weave the strips over the apple filling in a lattice pattern, pressing the edges to seal and trimming any excess dough for a tidy finish.
