Instructions

  1. Brown the Ground Beef: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Add the ground beef and cook until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat if needed and set the beef aside.
  2. Sauté Aromatics and Mushrooms: In the same skillet, melt butter and add chopped onions, cooking until softened. Then add garlic and sliced mushrooms, sautéing until the mushrooms release their liquid and begin to brown, intensifying the flavor base of your dish.
  3. Create the Sauce: Sprinkle flour over the vegetables, stirring constantly to make a roux that will thicken your sauce. Gradually pour in beef broth, whisking to avoid lumps. Add Dijon mustard, salt, and pepper, then let the mixture simmer until thickened slightly.
  4. Combine Beef and Finish Sauce: Return the cooked ground beef to the skillet and stir in sour cream. Warm through gently without boiling to maintain the creaminess and prevent curdling. Taste and adjust seasoning as necessary.
  5. Cook the Noodles: While the sauce simmers, prepare egg noodles according to package instructions until al dente. Drain the noodles and either toss them into the stroganoff or plate separately as preferred.
